Where I've been hiding...

The past couple of weeks have been hard.

We went on South Beach--and to try and get W off right (2 weeks of Atkins didn't work for him) I cooked ALL the recipes in the first two sample weeks, sans shellfish. And my respect for my Mother has risen another notch--with cooking three full meals a day and the antibiotics and massaging, I am *tired...*

But it worked--W has lost 12 1/2 pounds, and I lost a couple and stopped ballooning up five pounds overnight. It was those last refined carbos I was eating--rice and that one cookie. Apparently the secret is not getting hungry, and making sure it's a multi-grain carb and/or protein/fat is involved, to slow digestion and therefore insulin build and storage as fat. This disease feeds on refined carbs, so I see few of them in my future, unless a cure for this disease is found. Sad. And I have to do it--the antibiotics could make me gain 40-60 pounds, and aerobic exercise is a no-no. (Yes, the ballroom dancing once a week is cheating.)

However--the only other acceptable bread to multi-grain is sourdough--the acidic nature works to slow digestion! And, I can become an expert in creme brulee and cheesecake. And cookies that are ground nuts only, with Splenda. I begin to toy with taking a class in cooking basics. I may have to invent a show for food TV on cooking for allergies...

The adviser from TX Rehab seems to think I need to find something short-term that pays almost as much as solid massage (like medical billing, perhaps, 20 hr a week) and then find something I can be self-employed at, since I'm good at that, and many aren't. (As in make the LBb work for me.) I think he'd like to talk me into something that is a New Age Amway, but he has good intentions. I am still slowly working my way through a "really pinpoint your strengths and weaknesses" textbook (DO WHAT YOU ARE) while hoping this Supernatural romantic comedy I want to write really turns into something. Have two other collaboration ideas in the fire, as well as another Allie started.

Worked two nights of Haunted Trails, the descendant of Lord British's castle/nightmare, but can't keep it up--the pollen count for mold is around 25,000, plus my hands wouldn't work for a day or so after sitting in the cool and trying to write every five minutes. I have with guilt told the director I must bail, but offered to do some baking for the crew as an apology.

Sleeping a bit better--but still going to sleep too late (obviously...)

By the way...Splenda rocks....

My mother adores South Beach (she's lost 30 pounds she's been carrying for the past 20+ years since quitting smoking!) but despite that and the Guy's fondness for Atkins, I find that neither one works for me. Is frustrating, but the only thing I can do to keep weight down is small-graze on a wide range of foods, otherwise my body gets all out of whack.


And I think, absolutely a cooking show for allergies. I'd watch it! (The Guy is allergic to eggs, nuts, and soy, among other things, so I'm learning all about Avoidance in Cooking...)

I think its time has come, so I have briefly contemplated doing an Alton Brown and taking a real class so I have enough basics to sell the idea. But then I have great instincts. It's just I usually don't have enough background to satisfy the nitpickers.

I'm basically doing Plan One South Beach plus steel cut oatmeal, berries and apples. Otherwise, I got trouble. BUt there are indeed good recipes in there. And as W and I say, any diet that has dark chocolate-covered strawberries as an allowed dessert ain't bad.

You know...to a certain extent, that is what South Beach is--staying full by keeping insulin from spiking and converting to fat. You're just doing a more severe version of it, as I am--different, but a workable solution for you.

I've heard the theory that Atkins works for 40% of the population in the US because so many of us have O blood type, which is apparently the oldest type. If you don't have O, could that really have something to do with it?

Don't feel guilty. I have perfectly healthy people bail on me all the time. At least you have an excuse! Pain is BAD. Sleep is GOOD.

I tried to think of something that you can do inside without using your hands, but to no avail. Almost all of the people inside are tech workers and must therefore use their hands all night.

So, get healthy, get better and if we have a show next year, I'll try to find a role for you. ;)

SouthBeach is a good diet ... doesn't forbid carbs, which can drive you crazy, but keeps you honest. When I find the time, I'll be cooking along their guidelines. You're right, cooking well is a real time investment.

Now, if only I could stop calling it the SouthPark diet ...!

I'm always impressed that the harder things get, the harder you fight! Perseverance will win ... eventually.

LOL! Now, no Kenny burgers for Halloween...

At least the recipes in the book are mostly good ones (can't speak to the shellfish, but the others were either good or could work for us.) W did agree with me that a marinated London Broil was interesting, but we'd rather have grilled steak--and he wouldn't touch the stewed tomatoes and onions. I flash-grilled them in a skillet instead, which was tasty.

Yes. I don't talk about it a lot, unless to steer other people into evaluating if they need to see a doctor about it. I have a private friends and writers list where I occasionally report some of the more bizarre effects of the disease.

If I ever write something formal about it, I already have a subtitle for the book-- "Waiting for the Super Powers to Kick In". Some of them already have... ;^)

I'm afraid eating mysterious outside sources (like Teo's sugar free, fat free sorbetto) is cheating--I felt bloated yesterday. Ah, well--I will learn how to make ones with fruit and Splenda!

I'm a Splenda fan, too. A very few people claim they have that artificial aftertaste. Not me. It's as tasty as sugar!

Before the LBb was full-blown, it tasted like sugar to me, too. Now there's a tiny hint of aftertaste--but TINY. I can live with it--it makes unsweetened goat's yogurt with a few drops of vanilla quite tasty, and is good with oatmeal, cinnamon and berries!
