Do you know that there were at least a half dozen brands of pickles at the grocery tonight, and ALL of them except Claussen Garlic Dill slices had corn syrup in them?

And who do you think is not allowed to have corn syrup?

We can talk. I'm going to ask for a friend's recipe, she makes *AWESOME* sweet gherkins. For dill we're on our own...or maybe Alton Brown has a recipe?

Alton Brown does have both sweet and kosher dill recipes on his pickling show, which is transcribed here: http://www.goodeatsfanpage.com/Season3/Pickle/PickleTranscript.htm, although I'd be tempted to omit the sugar from the dill pickle recipe.

Good--for my copious free time....

How much sugar, she asked, fearing the La Brea Tar Pit of the recipe section of the web site (assuming this is the new, improved one I haven't been to...) A pinch offsets certain things and adds to flavor--but a bunch of sugar, nah.

I think the sugar is there to keep the bitterness away. The best dill pickles I ever had also know as the only ones I ever ate has sugar in the recipe i think....anyway the joy of pickles is that we can make a whole bunch of differnt jars and see which recipe we like......as long as we don't mind the wait......and Kathy you should read the link chris sent.....

Actually, we're having the same fun with making gelato, and I used to do that with micro-brewing. So, this works for me!

I'll peek at the link before crashing--very long day, up at 4 AM--
