So...a bit of milkfat may actually reduce the risk of Type 2 Diabetes.

It's only one study so far. But I must admit that when I was on Atkins, my triglycerides and cholesterol were the lowest on record. So...right now, thinking about keeping 100% butter, 100% clarified butter, 100% sour cream and 100% cream in the diet, in tiny doses.

But milk and alas, cheese, will be a rare occurrence.

Furry lobsters are still off the menu....

The test suggested that I not eat it regularly. I think it was a sensitivity test, tho, not a genetic one. The supplement I can take when eating out for possible gluten exposure can also be eaten for dairy -- so if I can afford Fogo de Chao, I can have a capsule and eat the flan! (Their rolls are GF -- make from tapioca root!)

yeah most people in the world can't eat dairy. (80% of the world) It makes me wonder why they try so hard to push it on people.

Because it was extra nutrition in some societies, and they became accustomed to eating it in small amounts -- usually aged, like cheeses or yogurt or glee. This drinking milk and eating ice cream every day is a last hundred years thing, and not good for us.

I'd say that for some people, it's fine. But if you think about it, the best milk is our own mother's milk, whatever creature we are -- and by the time we humans hit what once was adulthood (12-14) the ability to digest it goes away. Just as some people don't have the enzyme in their mouths to start breaking down carbohydrates. We evolved to fill a niche that we may no longer live in.

It's okay, as long as we figure out what works for us.
